Good coffee is mostly a series of small decisions made carefully. Here is every one we make between the farm gate and your kitchen.
We buy from eleven producers we visit in person, paying well above commodity price and publishing what we pay every harvest.
Twelve kilos at a time on a 1962 Probat, profiled by hand and logged bean by bean until the curve is exactly right.
Every batch rests three days and is cupped blind against the last one. If it does not beat the reference, it does not ship.
Bagged with a one-way valve the morning it leaves us, so the coffee that arrives still smells like the roastery floor.

The roaster runs behind the bar, so most mornings the room smells like caramel and the counter is warm to the touch. Come sit, ask what is on the cupping table, and drink something a day off the drum.
I have worked my way through a lot of subscriptions and Northbound is the only one where every single bag has been genuinely good. The Ethiopian in particular is ridiculous.
